Tiny Hands, Tasty Muffins
When I was a child, we had a very old cookbook called “Mmmmmmuffins” that my mom used to use all the time. The pages were dusty with flour and grimy with oil and smelled of chocolate and sugar. When I sat down to write this muffin cookbook, I was reminded of that book and my childhood home, where I would often wake up to the smell of chocolate chip muffins, or pumpkin muffins, depending on the season or my mom’s mood.
It made sense when we opened our first Young Children’s Community to start our first baking activity with muffins. The ingredients are simple, the setup is easy, and muffins are very forgiving. Children can successfully dump, stir, and scoop all of the ingredients and can feel proud when their classmates or friends eat the muffins that they lovingly and carefully prepared.
This cookbook is a roadmap for successful muffin baking with young children. Within it, you will find nine basic recipes, each accompanied by options on mix-ins to enhance the recipe. Each recipe will make 12 mini muffins. If you need more muffins for your children, double the recipe! In our Young Children’s Communities, we generally prepare the same recipe for a month, allowing the children to become familiar with the process. By varying the mix-ins, the muffins have more longevity and appeal for the children.
